What could be more local and seasonal than courgettes picked from our veg plot this morning? This moist tasty sponge is packed full of grated green and yellow courgettes and plump sultanas, topped with a tangy lime and cream cheese icing.
Crisp, light, huge, cocoa dusted meringues. Perfect with chilled whipped cream.
These little beauties are going straight on the Cooper & Read list, we’ll be making them according to the fruit in season. Pictured are raspberry with creme almonde and meltingly delicious pastry.
This beautiful cake was made by Ruth for our friend Daisy’s June wedding in ‘sunny’ Norfolk. By all accounts delicious as well as stunning. I was fortunate enough to taste a few practice Victoria sponges which were super yum. Very light, as a sponge should be and filled with homemade jam, cream cheese icing and fresh Norfolk strawbs.
I’ve taken advantage of a rare sunny day to pick some fresh Norfolk lavender from my garden. Next stop, lavender sugar.
..with white chocolate butter cream icing. I usually slather this cake with nutella as it makes a fantastic alternative to icing, you can also just melt chocolate with a few teaspoons of milk. Decorated by Ella so the sprinkles are a little uneven!
Delicious as these beauties were, I think I’m more of a cupcake fan providing they aren’t too loaded down with masses of butter icing, just enough to make me feel sinful but not sick!
I managed to hold them off just long enough for a few shots..rascals.
